2023 Ex Nihilo Pinot Gris


All sourced from the Tarrington vineyard down in far southwest Victoria, farmed by the Lacey’s who established their vineyard in the late 90s. The site produces excellent Pinot Gris, Chardonnay & Pinot Noir. we harvest the Pinot Gris over two separate dates, using whole bunch pressing & destemming to do skin contact for 5 days in small open fermenters. A large majority of the wine is fermented & raised in various casks of 225, 300 & 600L formats & some in stainless steel tank. 

The batches are left to rest for 9 months on Lees it’s then racked & estate bottled. A small amount of Sulphur added prior to bottling. Ive always thought its really important to have portions of skin contact when producing pinot gris, it’s a light red grape variety, there’s so much texture, vibrancy & interest in those skins that needs to be captured to influence the wine.
