2022 Jurassique Blanc Ouillé Chardonnay
Hard to believe that it’s 10 years of producing wine under Latta this year… it still only feels like yesterday I was tinkering around with little wine projects in the cellar (not much has changed.) I Cant wait to open up a bunch of back vintage verticals, especially excited about the jurassique cuvées! it’ll be a treat to see where these wines are currently sitting & working out where they’re going next.
Many people mention that our chardonnay (eastern peake) sometimes leans towards those styles, I guess you could say there has been inspiration from the Jura & left wing burgundy producers as well as all the ones in the middle. I just like textured whites, lees contact, great natural acidity, low sulphur, sometimes salty vinous wines, with a hint of good oxidative characters, sometimes boundary pushing, things that don’t make sense but do make good sense… if you know what I mean.
The fruit for this wine is grown on lovely red volcanic soils down in Tarrington (Not jurassique soils) in far south western Victoria at the Laceys vineyard which is 210m elevation.
Chardonnay was harvested at just over 12 baumé, whole bunch pressed on a long slow cycle in the pneumatic press, transferred to 228 & 300L French & Austrian casks, indigenous yeasts, again this season I decided to keep my barrels topped up on a more relaxed schedule to gaining some oxidative/texture. 12 months in barrel full malo, full lees contact with no interference, once racked from barrel it spends a further 2 months resting in tank prior to estate bottling.
MINMAL ADDED SULPHITES
HARVESTED AT 13.1 BÉ, WHOLE BUNCH PRESSED DIRECT TO OLDER BARRIQUES & ONE HOGSHEAD LEFT TO FERMENT ON ITS OWN TIME WITH NO ADDITIONS AT ALL. LEFT ON ULLAGE FOR 12 MONTHS, FULL MALO. RACKED TO TANK FOR 6 MONTHS THEN BOTTLED. ENJOY!
