2019 Yandoit Cabernet Sauvignon 

Only 81 dozen produced, I really enjoy cabernet sauvignon from another era, many styles of the new world really misrepresent the variety. Cabernet was king up until the mid/late nineties when high alcohol & excessive oak took control, a balance was lost, decades of fine wine trust gone back in 2014 I made a cabernet sauvignon from the shays flat vineyard in the pyrenees of victoria. 2019 I was excited to have another crack at it again from yandoit just down the road from the winery

Grower: Peter fyffe

Soil type: Mix of rich volcanic & Clay loam interspersed 

        with quartz & buckshot gravel

Orientation: elevated north facing aspect

Winemaking: destemmed 20 % whole bunches, fermented in stainless

elevagé: 500L & 228L casks

    Vinified in rectangular small open wax lined concrete fermenters, 25% wholebunch, indigenous yeasts, hand plunged, 7 week extended post ferment maceration, unforced naturally occurring malolactic fermentation, unfined, unfiltered & un-tinkered.  Minimal Sulfites Added
